Pressure Cooker Question

Hi, I just bought a 6 qt pressure cooker but it can only reach 12 psi and the teks that i've read said i should use 15 psi to sterilize my cakes and jars before inoculating. Should I return the pressure cooker and look for one that is 15 psi?? Will it be alright to sterilize with 12 psi? Anyone else experience this problem before? There's no pressure gauge on it either.

The PC I use only goes up to 12psi. It works just fine if you are doing verm/brf substrates. If you're doing grains I think you'll want a 15psi PC or cook your 12psi for an aditional 30 to 45 minutes past the tek specs just to be sure. In doing that you might be ok. I'm not big into grain or WBS cultures so this isn't a definative answer. Just something for you to go on until you get a post reply from someone in the know. Hope this helps in some small way. What he said sounds good. PF Tek doesnt need a PC and can be done just boiling..12 PSI will be fine. Whole grains I would think you could extend the time as well to get good results...90-120 minutes total at 12 PSI. I havnt actually done less then 15 PSI myself (I usually do closer to 20) but I have seen people with success at 12 PSI for that long. How successfull I'm not sure...

Check ebay next time for deals..I got 2 PC's for 50 bucks total shipped off ebay, a 23qt and 21qt..

I'm using brf/verm substrate so I'll go ahead and try it. I guess I'll put them in there for 60 minutes. Does that sound ok?

I used to do brf and didnt even use a pressure cooker a single time and never had a problem... you will be ok

i use a 6 qaurt and it goes only to 10 where does 12 psi come into play? but nayhow i use it for grains but of course,it works just fine. i've had contams probs but who doesn't..i wouldn't say its due to having a 10 psi pc more my fault but no worries..has karo jars plenty of juice to use.

i use my big pc at 10 psi becuase my stove isnt hot enough for 15psi and i do it for at least an hour... works fine so far :smile:!

Normally a 15 PSI cooker would require that you sterilize for 45 min. With 12 PSI you only have to sterilize for 15 min. longer. (mathmatical conclusion)
In contrast to others who have not done this method, i have many times with a 12 PSI cooker, using grain. ALWAYS WORKS WITHOUT PROBLEMS.
Its that simple.
Remember start that 60 min. time when your PC has reached its maximum temp.

You do this buy putting your hand under water and splashing the water onto the pressure cooker. If it boils away extreamly fast, its ready.

well i time my jars for about 1 45 minutes 15 minutes to build up steam then 1 30 minutes for cooking

Most common pressure cookers only HOLD about 12-13 PSI.

Pressure cookers once labeled their MAX PSI, which was found to be false advertising... in some cases... In other cases, those that held 15 PSI that were "Common" pressure cookers, often had "Issues" with exploding... (Not an issue today)

They have since come up with stricter rules, which forced these companies to only list a PSI that...
1) Could be HELD CONSTANTLY
2) Reflected an AVG within a set time period

Chances are that the cooker you have, is like others... it HOLDS 12 PSI, and AVG 12 PSI (+/- 10%). However, like the old cookers that sold as 15 PSI, your cooker will still get up to 15 PSI, after that one of several safeties will kick in. (Seal leaking, Second vent activating, Third pressure bleed opening... etc)

The "Super Cookers" or Commercial cookers have a gage and can handle up to 25 PSI in some cases... Yours will NEVER do that!

Just consider TIME into the recipe and you should be set. EG, 10 PSI = 1.5 hours, 15 PSI = 1.0 hours, 20 PSI = 0.5 hours... So 12 PSI = 1.3 hours.

Just remember to let the moisture soak into your substrate before you pastureize... (Let the super dehydrated contams get hydrated.) Otherwise you are not going to achieve your goal in pasteurization.

Wow, my 8Qt stainless steel heats up in about 20 min. on a small electric burner!

I would reccomend that you try getting it up to temp without the lid on, then fill and cover...

Other-wise your gage is broken, and you may be at 15-20 PSI... Unless you have too much air, or a 20qt pan! (More air = more time to build pressure, Broken gage = explosion from false readings, Excessively large pan = wasted electricity or gas.)

ad 15 mins to a 1 hour boil time. Cakes will be fine at that psi at regular times

I used a small t-fal that only did 12 psi for a long time ...I did all kinds of corn,bird seed ectera...we are only talking about 6 degrees differance anyway
