Is this an okay way to prepare WBS?

Measure amount of WBS needed, rinse 3 times, simmer for 30 minutes, load into jars, PC.

Do I really need to soak it for 8-12 hrs? Wont the heat allow water to enter it? Some teks say soak, some dont. What are y'alls opinions?

my first batch i just soaked for a hour or 2 max...rinse cook until you see kernels split. then load jars, i have a 10 psi cooker so i do mine for 90 minutes..im going for cracked corn as soon as it kools.i think i had a bad karo jar or somehting every batch was growing grey mold. pitched that jar.. working on growing amazons i really want to try cambs.

I usualy allow it to simmer for 45 minutes and stand for about 4 hours
add a little gypsum to the water before simmering and then add a little
more when loading the jars... this prevents over wetting which leads
to bacterial contams

Q 1) So you don't soak it you say?
Q 2) What is gypsum? and is it really necessary? 'Cause I don't have any and im already preparing my WBS :frown:

gypsum is the stuff that sheetrock/drywall/wall board is made from.
and the 4 hours of cool down time is more than enough soaking time,
it allows the grains to absorb the maximum amount of water.

when you drain the seed, allow it at least 45 minutes of draining time

k, so I drain it after simmering. When you say 4 hours of cool down, do you mean after simmering or after PCing? Also, after I drain it should I add water some water? If I'm using half pints, how many oz. of water would u say I should add, that is if any is necessary? (dry WBS = jars were half full or a little less than half)

Also, can finely ground oyster shell be used in place of gypsum, and if so, how?

after the simmer, let it sit in the water from simmering while it cools,
you'll want to allow a minimum of 2 hours but I recomend 4, allow it to drain for
45 minutes to an hour and then load the seeds and gypsum into your jars, you wont
need to add any additional water to the them because the WBS will have soaked
up all that is needed....

the oyster shell will be used in your casing after the jars have fully colonized
it is not a substitute for the gypsum, the gypsum isnt absolutely necisary, but
in my experience, it helps with a few contaminants.
