I will not be growing that many cakes my first time and was wondering if around a 6.69inch to 9inch tall chamber (using perlite humidification) would be tall enough to grow pf style cakes in.

Sounds good, just make sure to keep the air exchange up, in a small area such as that, the co2 tends to build up a little.
