very unusual growth

I HAVE NOT HAD TIME TO LAY MY SUBSTRATE OUT IN PANS AND I LET THE JARS OF RYE GRAIN COLONIZE FOR ABOUT THREE WEEKS NOW . THE JARS ARE COMPLETELY WHITE AND I CANT SEE ANY OF THE RYE. BUT IN SOME PLACE THE MYCLEUM IS TURNING PURPLE. IS THIS GROWTH MOLD OR IS THE MYCLEUM TURNING THIS COLOR AND WHY?

It may be drying out or it may be bruising against the glass, having needed to be birthed already. So birth them and pray it ain't contamination!
