cakes and casings at 7 days

About 7 days ago I had 11 fully colonized jars I removed from cold shock/dunk and put into fruiting chambers.7 cakes in 1 steralite with
perlite resting on wire mesh temp around 75 deg hum hi must be at 100%
because i have a digital thermo/hum gauge from wall mart and when i put
it in the chamber all it will say is hi.when i take it out it will go from 97% to 89% etc.4 cakes were crumbled 2 into 1 casing each verm on bottom and moist jiffy mix to cover it,these are in a seperate stearlite with perlite.hum just as high.
Now after 7 days into fruiting the cakes are completly coverd in bright white mycelium and have little pins fourming however with no heads or caps that i can see yet?????Am i doing something wrong???
The casings look really good bright mycellium starting to spread out
and start to fourm little pins .But i see no caps??The strain is pink buffalo.Am i just being impatient?Any advise would help out alot!
Also what can i do to get the humidity in the casing chamber on point?
The rel hum where i live is always high even in the winter.Almost forgot after the dunk/shock the cakes were rolled in dry verm.

You're being a tad impatient. Mist a little more for some additional humidity. You're doing quite well, though patience IS the hardest thing about growing mushrooms.
