i read in one of the teks that you can turn the jars upside down to help speed up the colonization. --- i have 7 pint jars that are just about fully covered with mycelium (just the bottom of the jars - and a tiny bit of the bottom of the sides-- isnt covered) what would be the pros and cons of inverting (turning them upside down) the jars? or should i let them be on there own?

If PF Tek, turn them upsidedown, there is not cons. If whole grains you can shake them.

Just let them sit there on their own. People only sit the jars on their tops to bang on them to get the cake to slide down a little bit so there is air down by the bottom of the cake. I think it's mostly intended for overly wet cakes.

Also in some cases (not sure about this one) people new to cakes have a tendency to want to 'vacuum seal' thier jars and don't allow for air exchange. By loosening the cap and inverting the jars, you allow for the CO2 to escape because it is heavier than air and will fall to the base and escape through the holes in the lid.

The cap shouldnt need to be loosened if theres no tape or anything but foil covering the holes (as it should be). Shouldnt hurt but shouldnt be needed.

Actually experienced pf tekers will not use tape, and turn the jars upside down to drain the co2

well its all been said but to clarify and sum up. spliff said, flip them give a slight tap so the cake isnt touching the bottom anymore. this allows for more oxygen exchange. also slut said it, it allows the co2 to get out cause co2 is heavier. to be hones ti can not think of any cons, its worth a go and for my stuborn cakes it works wonders.

Yes, it expells the c02, and also if there is moisture pooled at the bottom of the jar, flipping it will re-distribute it throughout the cake. There are really no cons of flipping jars at 50% colonization.

my luck is that my wbs is growing from the bottom up..i assume thats because the heat is more at the point of contact with the tub and the jars.

I'd just wait, it shouldnt be much longer now. Just insure that the temp is 82 - 86 constantly, and that they remain in complete darkness, then give it 2 or 3 more days.

thanks!!!!! and btw im using vbr, used canning jars (w/ the 2 part lids which i put the top part upside down) and just have the jars covered w/ tinfoil -maybe a bit tightly though- and never used tape. also there does seem to be lots of moisture drops around the jar even the myceleium is a bit yellowish (barely)

CO2 exchange isn't always a good thing. High CO2 levels are good during vegetative growth (mycelium).
Flipping it is mostly for wet cakes as was said, or ones that are pressed too tightly against the glass. For the most part it's probably just that minuscule part of the cake's outer layer that is not colonized if it's been stalled for a while like that. The mycelium network has, no doubt, colonized behind and all around it and one clean cut with a sterile knife will take care of the outer layer.
