One more newbie question. (Actually: two.)

I hate bogging down the board with simple questions, but you guys are so damn reliable.

First of all, I just harvested some Pink Buffalo, and after drying them, I noticed something I hadn't seen before on the inside.

Those two pictures actually show it pretty well. It's sort of off-white and looks sort of dry or fluffy or something, like insulation. The mushrooms hadn't shown any signs of contamination or anything, but I hadn't seen anything like that in my Golden Teachers, so I thought I'd check.

Secondly, anything wrong with either of these guys:

I've been a bit paranoid about rotten shrooms. Neither of the heads are dark, but they'd both stopped growing by the time I pulled them. (The deformed one was stuck against the side of the mycobag.) If you pull off the head, and the stem underneath is dark and pointed, is that a good sign of being rotten, or do healthy shrooms show that, too? What are some surefire ways to distinguish rotten from healthy? Does the inside of the stem change color or anything?

Thanks a bunch...

I like to cut mine in half right after harvest, that way they dry quicker and I can see the inside for any rot.

Also while we're in a rot thread, has anyone experienced harvesting a mushroom that when you splice in half there is an orangish brown spot inside that looks a lot one of those rotton spots you see when cutting up apples?

I assumed it was rot and threw the mushroom away, but I just wanted to confirm. Also, I found this in one of my jars of spawn. Had to throw away a whole quart. I don't think I've heard anyone talk about a contaminant like that.
