hey,

The coloniztion of one of my jars stopped at about 95 %.. is it ok to just cut this part out? or even leave it on and crumble anyways if im gonna case? It's been 3 days and not 1 bit more growth has accumulated

Flip your jars over and get some more O2 in the jars.

Flip them back over again and try to get a "vacuum" effect and get some more 02 in there. Unless you have some contaminants there is no way that your colonization should "stop".
