Rye contaminated?

PC'd some jars on the 15th for 2 hours, mushmush tek, 1/2 h2o 1/2 rye. Put in dark warm place. This morning 18th, jars are going like mad. But some have greenish tinge to them, no doubt mold. Is it possible the rye just gives this appearance or is this batch screwed? Smells okay right now. Thanks.

Did you innoculate w/ spores? If so, that's surely a contam. Are you sure your PC is reaching 15 psi? Where is the mold growing? top of jar? bottom? all over?

yeah, innoc'ed w/spores, pc @ 15lbs, pretty sure it was about 2 hours, did six quart jars. Maybe pc longer?
Mold is growing pretty much all over.
I'm guessing I need to pc longer and try innocing in a glove box.

It could just as well be your inoculate, i.e., spores/mycelia-water.

Another thing to think about is pre-soaking the grain for 24 hours. This will soften the grain and allow mold spores to germ. Then the PC can zap the life out of them.

Next time leave one control jar that you don't innoc. Just leave the lid sealed and see if it contams. If it doesn't, you can always innoc it later. If it does contam, you might want to look into a source for cleaner grain. In any case, the control jar will help you to figure out where the prob is.

finding a source for CLEAN grain cannot be overly emphasized. Different supplies of grain can have vastly different amounts of mold spores inherent within them. I am constaly looking for a cleaner grain to use when making spawn for my oysters.
