bacteria on shrooms?
    #3419329 - 11/28/04 01:18 PM (19 years, 4 months ago)

It's my first flush, but some of the drying shrooms are ugly. They are a discolored bluish (could be just bruising) but on a few there are also some green spots. Does any one else get problems with bacteria on their fully harvested shrooms? Is it still safe to eat do you think?

Should I use sterilized gloves when I harvest/handle my full-grown shrooms?

If the green color only appeared during the drying process, and you're drying correctly, the odds are that it's only bruising. Try taking a piece of white tissue or cotton swab and rub the green area. If the color comes off, it's likely mold. Elsewise, likely bruising. Any possiblity of some pics? How are you drying them?

Well, some of them definitely had bacteria because after a couple days they got real fuzzy. The way I'm drying them is in small plastic containers with desiccant on the bottom. I put a wire screen over the desiccant to prevent the shrooms coming in contact with the desiccant. I'll try rubbing them with a tissue that soundsd like a good idea. Thanks.

IMO this is a common mistake in the drying process. It's much better to give fruits a good fan-drying before enclosing them in a desiccant chamber. Once I put my humidity gauge inside of a desiccant chamber with some fresh [non-fan-dried] mushrooms and the readings stayed above 90% for well over a day. Airtight containers with high humidity is a recipe for bacteria/mold. The other advantage of air drying or fan drying first is that the desiccant will last A LOT longer. When you see the desiccant begin to 'glisten' it has lost a lot of its drying ability [and is a friggin nasty mess to deal with, it almost burns if you get it on your skin]. Fan dry until they're 'mostly dry' and you can use and reuse desiccant for many cycles.
