Kill your pressure cooker

So a dear friend of mine bought me a new pressure cooker the other day. I had been using a little 4-Quart p.o.s. cooker. I think it was only capable of like 8 psi or something. It didn't have a gauge on it, just the little release valve. Believe it or not I had a system hammered out on it that was actually pretty decent. But i had to blow that one up. now I have the 70 Quart Beast, complete with 15psi gauge. Unfortunately the canning instructions do not come with section dedicated to rice cake sterilization. Damn those inconsiderate bastards! So could somebody please tell me how to do it. I THINK it's like 20 min. at 12 psi? Also, i can fit like 24 jars in there, does the cooking time change for that? Dammit?! Shecky

70 Quart?? Wow, I am quite jealous. Didn't know there was such a thing..
I would go 45 min @ 15 psi. Time should be about the same any amount of jars. If you use bigger jars, then up the sterilization time. You instruction book may have some advice on that as well.

I think you'll find that 15 - 20 minutes is long enough in the pressure cooker. One of my elves didn't use any sterilization at all, he just worked really cleanly. He still had some good results!

Hey y'all.
I'm just starting out with growing, but I think I may make a serious Hobby of it, so I've been thinking about getting a pressure cooker after I get a paycheck or two... How much did that beast of a pc go for? (How much is a less impressive one, actually?) I'm finding it's hard to get 12 jars into my variously-sized kitchen pots without occasional bubbling over or burnt washrags. Most of my jars came through all right, but a few never colonized, and I suspect a pressure cooker would be more reliable--effiecient and a better sterilizer. If anyone knows the price range of these.cookers, let me know. I'd be grateful.

I always cook mine for 1 hour at 15 P.S.I. and I have never had contamination until I broke the seal even a month later. I bought my 21.5 quart pressure cooker at K's merchandise for $70. Hope that helps

Why dont you check Drool Donkey Island's Forum for Tools And Supplies. There are many links there that will take you to companies providing really cheap prices on brand NEW merchandise. If you dont mind using used stuff check out E-Bay where you can always find a deal.. peace
