using an oven to sterlize....
    #3412230 - 11/26/04 02:24 PM (12 years, 16 days ago)

I don't have access to a pressure cooker and my biggest pot can hold a mix of 3, 1/2 mason jars, I have 24 to sterlize. So I was wondering if it would be possible to pop them in the over for 30-45 minutes at 90 C (220ish F) and get them sterilized like that. As far as I know such low temperatures have no adverse effects in regards to Vermiculite or Brown Rice Flour and since they would be sealed and topped with aluminum foil, the water would not have anywhere to evaporate to. I have done this before with jars when cooking so I know they won't crack as long as I keep it under 140 C.

btw, this would be done in preperation for inoculation, I would obviously not stick jars with spores in them in a hot oven, I'm not an idiot.

so I was just wondering if this would be ok, or does someone know something I don't in regards to ovens and sterilzation?

thanks

i feel you grimlock it would take you 12 hours to steam all those jars. and to be honest i dont know if the oven would work or if its ever been tried for jars. if you can manage to fit 4 jars in your steamer it would knock 3 hours off of your time. to be honest this is what i would do. i would go to the store real fast ande buy a bigger steamer. a normal old pot cost around 10 bucks and can fit 9 jars. if thats not an option then i would do 12 steam 12 oven if you have the spores to spare. but im sure someone will know more about this oven method than me.

my problem is that the time other members of my family are not in my house is very limited and I would very much like to avoid having to do it over 2 or 3 days.

a side question: when using a big pot to sterilize, it is ok to stack jars ontop of eachother? the pot can fit 3 on the bottom but is tall enough to fit another 3 ontop of those, is such a thing is recommended. If I can stack 6 jars at a time, for 1.5 hours I would only need to do it 4 times, which is something I can handle.

the reason I ask is because I know its the heat, not the steam that kills the bacteria so in theory and oven should work just as well. I think I'll try 12 in the oven and 12 steamed and see what happens, I have tons of spores to spare.

yeah you can stack them then thats only 6 hours. i highly suggest doing that. and if you want to still experiment do 18 in pot and 6 in oven. and please let us know how it works out.

You don't need to PC flour, but I have used the oven for grains once with no problem. Just make sure that your jars are still in another container with water and a lid to reduce the water loss in the jars. You should be fine to use the oven for the PF Tek meathod. Just up the time to about 2 hours or so in the oven.

and since they would be sealed and topped with aluminum foil, the water would not have anywhere to evaporate to.

You can't use an oven to sterilize jars because the water would boil and you'd end up with dry substrate. Tape on the holes won't keep the water in if it becomes steam; that's what a pressure cooker does.

Go to WalMart and pick up a big lobster steamer for ~$10. Here's the one I used to use (on the right):

You can steam 30 half-pints in that sucker easy.

I would think that using an oven would severly dry them out, for the amount needed to heat them up throughly. Just buy a PCer from Ebay.

I used the oven with no problem. Maybe it was just luck but it worked.
