it has been day 9 and i have only seen mycelium in 2 of my 5 jars. i know i am going to wait until 2 wks before i chuck them. was thinking of opening the jars to inspect growth. Jars do seem very moist. i have read that opening the jars helps speed the grow of mycelium due to oxygen exchange but could it also be an invitation for contams?

That'd give them better gas exchange but almost would help spread contams from the air to your precious cakes. What you should do if you want better gas exchange is get some tyvek or some polyfil and make a hole in you lid and put the tyvek in there b4 you sterilze. That'd help A lot. And 9 days (typically for brf cakes) usually is when the spores start to germinate. It could take up 2 two for them to germinate and for you to see mycellium, so just wait and be patient. Gl

I removed the lid of the jars and replaced with tinfoil after inoculation.
