Anyone have a good recipe for enchilades?

Here in Australia there are very few decent Mexican restraunts and I LOVE enchilades!

We can buy all the bits and pieces in a kit to make them but to be honest they are nothing special at all and taste totally different.

Any recipies will be appreciated!

Oaxaca Cheese (sp?)
Some Salsa or premade encilada sauce
Nuke for 2 minutes and boom! (this is with meat pre cooked)

Yeah, here's what you do. You make a sauce by taking ripe tomatoes and grilling them then pureeing them and finally straining through a China cap. You take any smoked sausage and remove the casing and puree it as well, then combine the two with garlic, oregano (fresh is best), cumin and cayenne and chili powder. Just a small amount of the herbs or the sauce gets muddied. Simmer until sausage is fully tender. Adjust s+p. (You can make a green sauce with green tomatos or tomatillos too, and sub chicked and have Suisse. In that case some veloute in the chicken in the shells. )

Make twice as much sauce as you think you'll need. then brown beef, and add some sauce and simmer. Then roll up meat in shells with sauce and cheese outside. You need enough sauce so that it seeps into the whole enchilada. I use four cheeses - gruyere, cheddar, mozz, and provalone.

This is my recipe. But now it's yours. Try it. Don't make me be wasting my time here.
