Hydrated lime water in place of bleach?

  I had some contammed jars that I injected bleach water into.  THis did fine, but I forgot about them, and the mold grew back on the top of the grain out of the water.  I'm assuming the bleach has since devolved into its components, and isn't worth much.  So, I put about a tablespoon of hydrated lime into a quart of water and swirled this, sucked it into a syringe, injected into the contammed jars to cover the mold.  They're sitting there now, steeping in the lime water.  Is this all right as a replacement for bleach?  I'm thinking the strong basic ph should kill anything alive in the jars....  Thanks! :grin:

i think you're playing with fire. I've not heard of injecting bleach water into your cakes but I wouldnt eat any cakes that've been in contact with bleach water. Most contams like acidic Ph's so this might help. The contam already has a threshold so I doubt it'll stop it. I've got an idea, rye costs 70 cents a pound, throw that jar out and redo it being more sterile next time.

Hydrated lime is basic, but we're not talking like sodium hydroxide or anything here.

It won't kill things like spores outright, it will just make conditions unfavorable to growth.

Why are you cultivating contamination? :P Chuck that shit.

It is by no means a replacement for bleach.

I've done this to.Just add more bleach.Then throw contents away.I have far less contam's.Also you can put in soapy water for 24 hr's.Sometimes I do both.

Okay.  Sorry.  I need to explain myself better.  I had some grain jars that contammed.  I was going to empty them, but I like to inject bleachwater into them first to wet down any contaminants and kill 'em before I open up the jars (wet spot REEKS).  So I did this, shook 'em up, but then forgot about them.  Now, I have old bleach water standing in the jars, but the tops of the grain have re-grown the contams.  I injected very strong hydrated lime water into the jars to "top them off." 
What is the mechanism of killing contams for bleach?  Is is just because it's very basic?  I thought this was the case, so I used some hydrated lime water in place of bleach to kill the new mold on the jars I forgot to empty. 
I'm just trying to kill the shit in the jars before I empty them, because I don't like the idea of dusting my self and clothing with a buttload of mold spores when I empty them.  :wink:

As an alternative to the contamination slurry you are making, you could pressure cook the jars before emptying them instead...

When sodium hypochlorite is added to water, it forms sodium hydroxide (NaOH) and hypochlorous acid (HOCl). Hypochlorous acid is what kills pathogens, NOT THE HIGH PH. High PH just makes contams less likely to germinate and grow, once they have a threshold like stated they probablly wont be stopped with the high PH. In high pH solutions, most of the hypochlorous acid disassociates to form hypochlorite ion (OCl-) which is not an effective sanitizer. You might've messed up what you tried to do depending how much lime you've added. Look at this chart. http://edis.ifas.ufl.edu/images/23599947
