Can they colonize for too long?

A few of my cakes are near 90% colonized and the rest are near 50% and it's monday now. I'm leaving on friday for thanksgiving and I won't be back until the following weekend, I want to know if it's possible for something to go bad if I leave them in the jars for too long

I'm sure it's POSSIBLE, but not very likely. Let them colonize away while you're out enjoying the holiday.

You can always put your more advanced cakes in the refridgerator to slow them down until your slower ones catch up.

The biggest issue, I think, is water loss. I'm sure that dunking before fruiting minimizes any negative effects, but.. if you're worried, just turn the temps down a notch. Dropping down to ~65-75?F will cause a dramatic decrease in growth rate.
