basically the same as jerky i think. i like it best when the meat is rock hard and very spicy - like Don Juan's 'power meat'. you end up chewing on a small ball of fibrous tissue, from between the muscle sections.

at the moment i spend a fortune on this stuff in Oxford Street, in Selfridge's Food Hall. hopefully this will turn out good, in which case i'm gonna love it love it love it, as Kevin Keegan would say.

any biltong connoisseurs out there?

Ted Nuggent lives about 30 miles from us. That dude has started a Biltong company. If the stuff you are going to make is anything like the stuff Ted makes. Then you have the right thing.

Biltong is freaking great.

i changed up to a 100W bulb, as the room the box was in was getting chilly.

after 4 days hanging - here: .......  and sliced for eating: .....


there's still a couple in there i'm gonna give an extra day to go real hard for storage. but this one is deeeeee :tongue:lish  :crazy2:

it's cured dry raw meat, slightly moist and chewy in the middle, and real spicy and dry on the outside. i can see how this wouldn't appeal to all - it certainly sounds pretty iffy. each to his own!

anyway, thread closed. i consider this a success, as the meat was cured without spoiling, and tastes just like i hoped. next time i'll cut thinner strips and use the 100W bulb throughout. otherwise no changes. cheap biltong!  :crazy2: :crazy2: :crazy2:

Shirley you got it right. The stuff Nugent sell looks just like that. Thick ass jerky that is still juicy and meaty on the inside.

I made some using the same recipe on the site shortly after reading this thread. Did it in my oven on the lowest setting though with the door cracked open.

That is the coolest thing i have ever seen. I love beef jerky. This looks like it could be even better than my dehydrator!
