Agar is just used as a solidifying agent. Early bacteriologists tried using gelatin but found a lot of bugs had enzymes to degrade it. Hence agar which most bugs cant liquefy. I dont think it matters what grade of agar you use, you could probably even use gelatin!

I used food grade agar with success. It was little time more needed to dissolve that agar than microbiological one. Other difference was that food grade agar gives not so clear gells. Works fine in general, with antibiotics and without them.

I've done mold cultures using lime Jell-O.  It worked just as well as agar cultures.  It looks kind of funny seing green gel in culture plates next to a bunch of normal agar plates.
