Scratching Cakes

Welcome to Saturday!

I've been reading up on gourmet mushrooms and it seem with oysters growing in bottles and enoki in bottles, cultivators scratch the mycelium at the bottle opening to help initiate pinning and provide an even pinset. The mycelium thinks it is injured and goes into a reproduction phase.

It occured to me that besides the obvious fact that verm provides cakes with additional moisture, could it also be that the rolling actually scratches the cakes and accomplishes the same as above?

Has anyone tried to scratch cakes? I'd like to get some opinions ...
I'm am going to try this experiment on my next batch of fresh cakes. 4 I will roll, 4 I will scratch and 4 I will leave alone. All will be dunked of course.

It doesnt sound like a good plan however.

Scratching a cake can easily lead to contamination. Scratching also isnt good for casings and doesn't stimulate growth. Scratching is done ONLY to casing layers (non nutrious and wont contam when you tear it up unlike cakes which are substrate and can contam) and only to overlaid areas. Overlay is a hard mycelium shell on the surface of the casing that prevents water from being absorbed. The scratching gets that hard layer off so you can add a little new casing mix and water will absorb much better. Rolling in verm is nothing like scratching a cake..scratching can cause trauma to the myc stalling it and causing it to waste energy repairing itself which could be better used fruiting.
