saving a contaminated jar?
    #3350489 - 11/12/04 09:34 AM (12 years, 26 days ago)

I hear about you guys using h202 all the time to save your cakes, but is there any way you can save a jar from contamination? I just looked today and it appears to be getting blue green mold towards the top of the jar. It COULD be cobweb, but I think its blue green. It's not grown large enough to fully tell yet. The rest of the jar is colonizing great except that one little area :frown: I've already separated it from the rest of my jars by the way. Any help?

Cobweb is greyinsh white and streaky. And it spreads fast. So, it's probably not cobweb.

It could be bruising or mold. Post a pic in the contam section.

If you get contam in the jar and you try to save it, you are risking a lot. First off, it can become airborne and spread to other places in large numbers, which could result in having a mold farm in your house. Second, since the cake isn't fully colonized, you'll have to fight the mold in more than one front line.

IMO, it's better to just throw that away and clean the jars for next use. Most contam problems are like wars... lots of small battles after the big one.

Thanks for your input. I was going to post a pic, but its so small that it wont show up in a picture. It's definately got a greenish look to it though so Im just gonna take your advice and throw it outside while Im ahead and clean the jar out. Thanks again man!

oh.. one more thing... always inspect under white light. Some blue bruising appear green under normal incandescent light.

Saving a contaminated jar may be an oxymoron.

Just a small update, I just went outside to empty the jar out and even in the daylight it was clearly greenish. I opened the sucker up and while there wasn't LOADS of the stuff, there was still a decent amount of blue green fuzz across the entire top of the substrate and even some in the middle of the cake. So I guess this leads me to one more question. What's the best way to clean out that jar now? Or should I just throw it out and never try using it again?

Also, I PC'd a few jars like close to two weeks ago and I left them in the PC to cool. Theyre still in the PC. Are they still considered sterile to use or should I just throw in some more water and PC em again for another hour. I only ask this because theres a SLIGHT hole that was built into the PC and I dont know if contams could get in there. I've heard that once you PC the jars they are sterile indefinately until you use them, but I just wanna make sure.

bring a bucket outside, fill it with water and bleach(1/25th is strong enough) soak it for few hours and then rinse thoroughly.

Then you wash it like a normal dish.

Those jars in the PC should be good.

Just so I know for the future, how can you tell the difference between that type of mold and bruising? Im fairly sure that my jar had mold in it because it was a fuzzy type of green, but how would you be able to tell without actually opening the jar?

Experience... Once you see bruising IRL, you'll be able to tell all others apart.
