Another Harvest Question

This is probably a stupid question, but I want to make sure before I make a mistake, and I don't remember reading an answer to this before... Is it ok to only harvest some of the mushrooms at one time if it looks like a few others on the cake still have a day or two to grow? Or should I just pluck them all and then dunk my cake?

As far as potency goes, they are potent as soon as they start growing from pins, right?

Is contamination an issue once they're harvested? Obviously I won't leave them sitting out in a dusty room or anything like that, but it's ok while they're fan-drying, right? (I know the desiccant chamber has to be air tight).

And finally, obviously they bruised where I touched them, but this isn't a problem is it?

I've never had a problem picking mature mushrooms off of cakes and leaving others to grow for another day or two.
Im only speaking from my experience though.

There are technically no problems with it, but many of us advise to do it all at once because it reduces the ammount of handling and outside exposure the cake recieves.

Sometimes it can be difficult to get them off without holding the cake down, but sometimes they just fall right off.
