Gumbo~

Anyone here like gumbo? I be making a pot of it like every month. I use Sausage(smoked),hot links, shrimp, bell peppers, scallions(green onions), chicken wings or breasts, large yellow or white onion, and File powder...
Also use a bit of time, bay leaf, oregano, basil, and louisana hot sacue. O cayanne pepper too.
The rou (sp?) is the most tedious part. (also not too into crab in my gumbo it's alot of work with little pay off).
So anyone else make gumbo or Jambablya?
Any recipes? Do u actually like okra gumbo?

I love gumbo! I went to this fancy cajun joint that had this kick ass gumbo. They would serve it boiling hot and would throw two live crawdads in it when it got to the table. You'd wait a minute or two and the crayfish would cook in the hot mixture. Grade A good shit in my book.

I love gumbalaya

put a scoop of your Jambalaya in a bowl and cover with a scoop of gumbo

make sure you have some nice baggettes

jambalya

4 green bell peppers
3 large onions
a bunch of celery

This is called a trinity

So first off chop all your veggies into bite size chunks and saute these in butter until aldente. I like to add some canjun seasonings here like tony's or jambalaya seasonings you can get at your grocery.

Next take your meats of choice. I usually use an andoulli sausage and a spicy Italian, some chicken and some shrimp. You can use anything you want here. Take all your vegies and remove them from your pan and set aside (make sure you keep all the juice as yout trinity adds essentail water to your rice later). Place your meats in the pan and brown until done (i also season my meats the same as I did the veggies). Now you can combine the meat and veggies and let them sit in the pot until your rice is ready.

for the rice, cook 5-7 servings of rice in 4-5 cups of chicken stock

the rice will not be quite tender when you add it to your meat and veggies (throw everything in as big of a pot as you have)

return everything to a medium low heat until the rice absorbs the remaining meat and veggie juices

serve with hot sauce and bread

i'll give it a try. not  big on celery in my gumbo i usually omit it...

ps... crayfish aren't essential to gumbo it's a preference thing as everyones gumbo varies :beer:

you don't have to put anything you don't like in it

just add the same amount of another veggie that has a lot of water in it - or just leave it out and add another cup of liquid to your rice

you can also make a red based jambalaya by adding in tomato sauce and or chopped tomatoes

i love gumbo. unfortunately, i usually get distracted by one thing or another when i cook, so i often burn the roux.

You got to start over if u burn your roux since it's the base....
Do you like it dark brown or just medium brown???

I cook Cajun food every day of my life on Bourbon St. You make dark roux by getting the oil smoking then stirring in flour fast and whipping until medium reddish brown, then adding trinity, tomato, and sausage, garlic and stirring. If the roux was hot enough then the veggies carmelize and make the roux almost black without having added any burned connotations. This is the real way to do it. Or you can jack off for an hour.

No tomato in my gumbo...
Half of my family is creole so they got there own idea's on what makes it good gumbo but doesn't everyone~
Not sure the differences between creole and cajun cooking but i'm sure there are some... Right?
West coast here, but got a ton of family in Louisiana :beer:
