harvesting shrooms and pins?

My friend had an uneven pinset and now there are several stages of growth happening at once. There are some big ones that the viel has broke..there are also some medium size ones that the viel is attached...and then there are small pins and small young mushrooms as well. Does one need to harvest all of these to encourage an even pinset for the second flush? Or do you just get the big ones and let the others continue. If you harvest all of them, do you replace the casing material completely or do you just replace the valleys and make it even again...or do you just mist the original layer and let it go...thanks for the input.
