One more question...

First time grower, my jars are colonizing nicely. Do I leave the holes covered or let them breathe?

As well... does it matter if the jars are upside down? That way I can check their progress without lifting up each jar, and when the time comes to birth them I just unscrew the lid and lift the glass off... for these ones (1/2 the jars).. the first question is moot.

Tape off after 50% colonization. Upside down is fine.
