Add vinegar to baking soda in a large bowl. This will produce CO2. Since its heavier than air, you can then "pour" the CO2 into your bag or jar. It will displace the air and you can then seal it.

Helium is an inert gas, it does not react with any chemical within the shrooms. Turn the storage container upside down so the helium enters and the air escapes.
