How much airflow do rye jars actually need? Should the smaller metal disc even be used if useing the 2nd Method?

Not much. It's a pinning trigger so you don't want to like open the jars. A small hole for inoculation, covered by the tyvek is fine.

They do not need any airflow at all. Tyvek is not for fresh air exchange but for gas exchange. They need co2 for vegatative growth but the jar becomes filled quickly so holes must be present to release the buildup gases.
