 Cakes that stall or stop colonizing

I have some PF style cakes that have stalled or have appeared to stop growing due to some spaces in the substrate.
I know that you CAN remove cakes before fully colonized with a certain increase in contam risk.
My questions are: 1) how significant of a risk is it to remove the cakes before completely colonized and 2) will these stalled jars still colonize fully(especially the one that has some spaces and gaps in the substrate about 1/4 - 1/2 of an inch)

I'll just about guarantee that you'll have green mold if everything isnt done
within a sterile environment, for instance, rubber gloves, sterilize the jars
and what ever you are using to finish incubation, a plastic bag would be the
best to use but the area if insertion would need to stay out of contact and
all work should be done inside the bag...
if you have tape over the holes, remove it and wait a week to see if it speeds
up, if that does nothing flip it over and wait, dont open the jars before 100%
or you'll almost certainly fail...
2) will these stalled jars still colonize fully(especially the one that has some spaces and gaps in the substrate about 1/4 - 1/2 of an inch)
yes, the air space isnt really much issue, it will colonize around it and it
actualy offers faster colonization if its not a large gap that has to be bridged

The gap would certainly require a bridge. A lot of my cakes from this batch are nearly done, but I have about 5 or 6 that are being stubborn. I guess I will just wait it out. I have already tried loosening the lids and turning them upside down.

how long since inoculation? how long have they been stalled?

They were inoculated on Oct 7th(so 24 days)
The ones that have stalled have occurred over the last 4 - 5 days I would say. At least 2 of them have only colonized the upper half of the jars.

what are your temps? 3 weeks isn't bad. i just did some gulf coasts that took almost 5 weeks. hang in there.

My temps are around 82. I am using Palenque(1), South American(1) and Z strain(2)
Main reason for concern is that about 28 jars are nearly fully colonized, while 5 or 6 are only around 50% and don't appear to be moving into the bottom half of the jars.

well, your temps seem ok. if they are multispore inoc's and you've only got 5-6 that aren't doing hot it might just be weak myc. not all the myc that grows from a multispore will do well, that's why a lot of people clone so they work from pure strains that they know will fruit.
keep flipping them every other day and wait till a few days after they've hit 100%. it could be a few more weeks, those are just the breaks dude. birth them as they're ready. if you've got a few that just won't finish, you can crumble them up into a casing to see if you can make them fruit.
like i said, i was in the same position you were a few weeks ago. it took me 5 weeks to get full colonization. flipping really helped them out.

Thanks a lot for the info bro.
I was planning on waiting it out, but wanted to check on opinions for early birthing and casing the incomplete jars. If I wait too long, I might get impatient and try to case a couple of the ones that aren't fully colonized as a personal experiment

yes also i have found that jars will stall if the moister level is to low so if they look a little dry take a sterlized syringe fill it with distilled water or boiled water that was allowed to cool in the syring and inject it into the midle of the cake until it appears moist again i have done this a few times with success and a few time with contamns just be sure to do it in a steril environment and make sure the syringe is clean just like inoculation
