mycelium waste + overlay

2 questions here:
1) AF took the cake out of its jar and there was a tiny area thatw as lightly brown/yellow coloured. Kind of goo like. Could this be mycelium waste? Anyway, he/she cut it out and cased the cake whole - if ther were a chance of contams how could check in a casing?

2)AF understands what overlay is on a casing - it was described elsewhere as a shiny kind of coating on the mycelium as well through which pins could not grow. Now AF sometimes gets this on the cakes whent hey are taken out of the jars - anyway to stop this - sometimes it could be caused by too much moisture - any ideas?

Cakes are owerlayed by their nature, since you want a colonized cake.
But you don?t want a completely colonized casing.
