Burst grains and bacteria

My buddy has been having trouble with burst grains and bacteria. He soaks (wbs and popcorn) for 24 then simmers for 15-20 min then pc's @12 psi for 65 min. The wbs comes out 80% burst and the popcorn about 10%.

He doesnt want to simmer less because the grains dont look like they are soaking up enough water as they should and he doesnt want to pc less because he has had trouble with goin green under 50 min pcing.

22 out of 24 pint wbs pint jars came down with very slight wetspot but it was enough to stall them out completely before they could reach 100%. They smelled very slightly of dirty socks.

He did however dip 7 of the best jars in a peroxide bath and removed all the uncolinized (5%) wbs and cased. Both casings are doing very well and are currently colinizing very evenly.

What can he do to get rid of the bacteria problem? And why was the bacteria showing up only after a couple weeks.

He uses tyvek with bandaids and the wbs brand is Mills Bros. Hasnt had any probs with the popcorn but its only a few days old.

any help would be greatly apreciated.

people soak wbs for 18-24 hours and just drain, rinse, drain for 30 more min and PC. Simmiering seems to work well if you do not want to soak for a long period. Simmier for 45min+- then drain, rinse, drain and PC.

The PC time also seems to be lacking. Most would go at least 90min@15psi.

He tried the no simmering route but that jar now looks really dry.

Also he is going to mod his weight on his pc to get 15 psi and drill the lid and tig a bung for a pressure guage.

getting optimum water content is a little harder then is sounds :mad:

Try changing the brand of the grain you're using.
Also, you can add a little bit of bleach to the water you'll be using to soak the grain.
Sometimes timings are hard to get, they all depend on the kind of grain you use.
