theres gotta be some trick. im wanting to try and sell chantrelles at a market but am kinda confused hwo to pack and store them. im not cutting them so that should help. so i pick them and wipe em off and then what? looking at the mushroom buyer guy they keep them in well ventilated baskets (liek laundry baskets).

also if you could mention how long one could expect them to last. yellow and white chantreles are the ones im gonna try and sell. perhaps.

I can't speak for chantrelles but surely the below is applicable to some degree:

fresh shiitake stored in a paper bag placed in a refridgerator will keep 7 days without visible deterioration and another 7 days with only slight drying and browning. i have actually stored shiitake in this manner for over 30 days without any rotting. the mushrooms simply dried as they would have ended up in my dessicator. generally however, shiitake stored in this manner should be discarded after 20 days.

it is best to get from collection to storage as quickly as possible. i haven't experimented with it but have heard that for each hour the collected mushrooms remain at room temperature a day of shelf life is lost. the wetter the fruits the smaller the storage window. i have collected extremely wet shiitake that would be rotting in the bag within 7-9 days. in this case it is best to allow the mushrooms to air dry a couple hours prior to bagging.

people will gladly purchase mushrooms prepackaged in paper bags. paper bags are cheap and easy to label with dates and weights. it is particualrly useful at farmer's markets where you can get a feel for good pre-weights to package. paper bags are more enviro-friendly than plastic and styrofoam which you typically find mushrooms in at the grocery store.

a final note... your mushrooms will lose water weight in the refridgerator. be a good supplier and overweigh. for reference a 16oz bag of large shiitake will lose almost exactly 1oz of water weight within 5-7 days of refridgeration. also, shiitake stems are generally discarded. i try to take that into account as well. my "16oz" bags are initially weighted to 500g (~17.85oz).
