Easy Fettuccini Alfredo

I got this from a friend on IRC for tonight's diner.

  • Heat 6 tablespoons of butter in a pan until it's melted and foamy.
  • Take two crushed cloves of garlic and sautee slowly, removing them after a few minutes. (You really just want to scent the sauce with garlic)
  • Add 2 cups of heavy cream, raise the heat and cook down until it is reduced by 1/4.
  • Add a little salt.'
  • Now take your hot pasta, and put in a large bowl ... or better still, the pot you cooked it in, but drained of water. If you drained it *really* well, add a tablespoon or two of the cooking water back to the pasta, and shake it around.
  • Then add 4 - 6 ounces of freshly grated parmesan or romano to the pasta, and toss.
  • Then add the reduced cream sauce to the pasta, and toss until it coats.
  • Add a little ground pepper, serve with some more grated cheese.
  • serves maybe 2 to 4 people.

yum, i love fettuccini alfredo. maybe i'll try that sometime. was it good?

I add the cheese straight to the cream sauce but the rest ia all the same..

Damn good stuff...      :thumbup:

Gabba: As for the cheese, I find that the parmesan tends to clump even if you add it while the sause is hot.  I like to get the coating on the noodles then let the cream fill in the rest :smile:
