picking from a casing

I've got a few casings going. One has a small forest of EQ's of various sizes. For the most part, they are growing in clusters with the bases of the shrooms in each cluster touching. How should these be picked? I know the optimal time is just as the veil is breaking, but what if the flush is not "even" in maturity? Say a large shroom is breaking the veil but has 4 smaller shrooms growing from a common base?

Should they all be picked at once?
Should only the mature ones be picked?
Should they be left alone to allow the youngsters to grow more?

I would leave them on the cake until the majority of them are reaching maturity. As Sam posted in another thread where someone was asking nearly the same question, some of your mushrooms may be dropping spores, but it will allow you to clean pick all your mushrooms at once and rehydrate if you desire.
