Jars in PC
    #3264998 - 10/22/04 05:51 PM (12 years, 9 months ago)

Once jars are finished PCing, should they be left in the PC overnight to cool or should they be moved after a certain amount of time out of the PC and placed to cool elsewhere?

i usually leave mine in the PC to cool over night, gives contams less of a chance to strike

Well if you take the jars out of the pc while they're still hot they're gonna suck in the cooler outside air which may have contaminants floating around. You're better off to let them sit in the pc until cool.

But if your doing a large run of jars you sometimes need to do more than one load of jars in a night or day. And if your using tyvek there shouldn't be any troubles of contams getting into your jars. I remove them right away, i just vent the pressure cooker and as soon as it lets all the pressure out your good to go, of course the jars are going to be hot so use hot pads when handling. Also i like to shake the jars right after removing them. I heard it helps them from clumping up, not sure if thats true or not though.

If the jars are warm (not hot by any means), is there any disadvantage to putting them in a bowl of ice-water for a few minutes (assuming they won't crack)? I'm doing the Karo Tek, I inoculated one jar with 3ccs of Cambo and one jar with 3ccs of GT. The jars were finished PCing at 6:30. I let them cool in the PC until around 9:30. They were warm when I emptied the PC. I put them in a box at room temp. About 30 minutes later I put them in a bowl of ice-water for about 10 minutes. When I came back they were cold and I inoculated. Is that acceptable?

Yeah, I hear ya. I'm gonna leave it alone--not even look in my incubator for a week. And if it's contamed I'll start again. And I'll wait overnight this time. I've got about 7ccs left of each strain so I'll be ok.

Yes there is a disadvantage to force cooling jars..the outside could be cooler then the inside. It can also cause water to steam out. Besides possibly causing the jars to crack..but usually thats only if they already have imperfections.

Stick a fan in front of the PC it cools in about an hour, it is completly cool all the way through, and it doesnt cool too fast so that the jars break. Works for me.
