Using stalled spawn?

I have 6 quarts of WBs thats been colonized for about 9 days, I dont have time to make my substrate till thursday. So i wont spawn till day 12. Ive had them out of the incubator for about 8 days in my cool room around 65-70F. What should i do? Should i throw them back in the incubator to speed up growth before spawning or just bring the temps up to 75 and spawn? Does anyone have experince with using stalled jars as spawn? Should i Just make another batch and G2G then use this spawn in a smaller bin so its a higher spawn ratio and do the bigger bin a week from now?
