i got a maitre's pc

and it really sucks so i'm going to return it for a presto with a pressure gauge after i try to run a few jars through it. here's the thing...the jars were simmered last night but i couldn't figure out the pressure cooker instruction until this morning. the jars have been sitting out in my room and i was wondering if they are still okay to PC and if the result will be a sterile jar (i don't know if they've grown some crazy unkillable mold by now).

also, instead of all those tyvek layers is it cool to just use alluminum foil?

I would say that if the PC works properly it will kill anything that may have germinated. Yeah one with a guage is so much better.

it doesn't suck anymore b/c i finally got it working  :cool:...but its a 6 quart capacity which means i can only fit 4 pint jars in it at a time.  plus i don't really know how to deal w/ the right pressure by gauging the rocker.

anno, is the weight supposed to rock continuously for the duration of the sterilization?

Yeah, I have a Mirro that works at 10 psi with one of those weights on the top. I start timing for sterilizing from the time the weight starts to rock. The weight keeps rocking until I turn the stove off and the pressure releases.

with my AA I wait for the rocker to start it's business and then
back off the heat until it just barely moves, usualy thats around
medium on the stove, after the rocker starts moving thats the start
of the cycle for timing

hey p1, that's exactly what i did, so i think it'll be okay. i'm gonna have to wait for it to depressurize so i can run another load...aa's have rocker's on them? i thought they just had a guage.

The rocker should rock about every 5-10 secs for a couple rattles. You should not hear a constant rattle for the duration of the cooking period. If it rattles non-stop, then it is too hot.

you'll be good then, the rocker on an AA is also the pressure regulator
it has 3 settings, 5-10-15 psi and it still acts as a rocker



the guage is there so that you know what range you're working in.
