My favourite sandwhich

Ok You may have better ones so if you do I wanna hear em!

in order of layer from bottom to top :::

slices of chicken breast
fresh lettuce
sliced tomato
chopped onion
mango chutney

its not even complicated man! just tastes like sandwhichs are supposed to taste!

I also like a toast sandwhich with salami tomatoes and onions...

BUT as much as i love these one, variety is tha spice of life so I wanna hear your good'uns!

Chutney is a thick sauce of Indian origin. A sweet and sour condiment made of fruits and/or vegetables cooked in vinegar with sugar and spices; some chutneys are reduced to a puree; others retain recognizable pieces of their ingredients.

Mango Chutney
4 pounds fresh mangos, ripe but not too soft, peeled
3 tablespoons vegetable oil
1 teaspoon chile flakes
2 1/2 cups medium dice red onion
1/4 cup minced fresh ginger
1 cup small dice red bell pepper
8 ounces unsweetened pineapple juice
4 ounces cider vinegar
1/2 cup brown sugar
1 1/2 tablespoons curry powder
Kosher salt and fresh ground white pepper
1/2 cup raisins or golden raisins
1/2 cup toasted, roughly chopped macadamia nuts

Cut the mango flesh away from the pit. The pit is shaped similar to an obelisk, so you'll end up with 2 large pieces and 2 smaller pieces from each mango. Roughly chop the flesh.

In a saute pan heat the oil and add the chile flakes. Be careful not to burn the chile, just toast to flavor the oil. Add the onions and sweat until soft. Add the ginger and bell pepper and saute for 1 to 2 minutes. Finally add the mango and cook for 1 more minute.

In a separate bowl, combine the pineapple juice, vinegar, sugar, and curry powder. Add this mixture to the pan. Stir to combine. Bring the mixture to a bare simmer and reduce for about 30 minutes, stirring frequently. Season with salt and pepper. Add the raisins and the nuts and transfer to another container over an ice bath. I used a mild yellow curry powder, but if you want it hotter go for red.

Pesto:

A shit load of basil
A load of garlic
parmasian cheese
Black Pepper

Blend those together with olive oil
I eye ball it and make pesto.

Chicken Pesto sandwitch:
Peso,
Chicken,
bread,
Immagination.

one of my favorites, but i don't make it very often is a california avocado monte cristo sandwich.  there's some variations to it, but they all contain the same thing.

first, you have to very lighty butter 1 side of 2 slices of white bread.  then, you dip each slice into a salted, beaten egg mixture.  after that, you brown each slice in hot butter in a skillet.  kind of like french toast.

i like a little mayonnaise, so i spread a little on each piece of bread.  except i use garlic butter that i make.  it's real easy, you just use a garlic press and squeeze a clove into about a stick of softened butter.  i don't like it too garlicy, so i keep it light.  you stir in the pressed garlic and put it back in the refridgerator for when ever you want to use a little as a spread.

now, you take some slices of avocado and a couple pieces of turkey lunchmeat and slap those on there.

damn it's good.  some people put the whole sandwich together first, then dip the whole thing in the beaten egg, and brown it as a whole sandwich.

for an everyday sandwich, i just toss a piece of provolone and a couple slices of turkey between some bread and go.

it's got to be real mayo. hehh

another one i make more often is a bacon and egg sandwich with cheese. this one is made pretty fast.

i start out by slicing up 2 or 3 pieces of bacon into small pieces, maybe a half inch wide. then i brown and crispy those in a small pan. i use teflon. after the bacon is nice, i crack in 2 eggs and stir. add some salt and pepper (i use red or cayenne) and a little thyme. this ends up like a scramble and binds the bacon. i kind of move all into one piece. once it starts to hold a form, i flip it and give it a fat sprinkliing of cheese. then i turn the burner off and wait for the cheese to melt.

spread some mayo between some bread and put that in there. voila. good shit. sometimes, if i remember, i'll toast the bread.

Alltime favorite for me is a Reuben. I love how the kraut and the thousand island dressing compliment each other creating a wonderful sweet and sour kind of flavor.
