I like to be extra sterile I sterilize at 15 psi for 1 hour if they are stacked a little longer would be good do not stop if you are boiling the jars and sterilize for about 2+ hours in a pot

Everyone does things differently, I say your ok, PC cookers cook with pressure no need to be submerged in water, on the other hand regular pots need the heat and jars will have less contams if all jars are at leaast 1/3 under water. If you have a good sealing regular por, go for it, you can mark the out of water jars and do your own experiment. If you boil the regular pot jars 45 min you should be ok................

I just boil in a pot for like 4 hours. you gotta figure whats the rush, you gonna wait a month anyways, so take the extra few hours boiling just to be on the safe side.
