Simply the best guacamole you've ever had

Made easy, and smart.  Try it and don't switch back. 


Shit you'll need:
==================
1 package Guacamole powder mix
2 fresh avacados
2 Roma tomatos (the small guys)
1/3 white or yellow onion
1T crushed garlic
few splashes of hot sauce
few dashes of salt and pepper
(((2T LIME JUICE))) Thank you for pointing out I did not add lime juice Dauss.....

What to do with that shit:
===========
Cut and peel those avacados, take the nuts out  :mad2: and throw the green into your mixing bowl.  Crush well and make sure the avacado is no longer lumpy.  Cut up your onion and tomatoes into small pieces (only use about a third of a large onion, unless you're an onion nut) and chuck em' in the bowl.  Mix all the rest of your ingredients in there.. make sure to mix everything very well, taste and see if it's spicy enough for you.. if not add some hot sauce.     

No lie, it tastes VERY authentic... you won't believe it.

what about lime juice? You need some sort of acid to add to it, otherwise guacamole will turn into this brown color.

hey..i just made some tonight.  what a coincedence.  except i don't use any of that powdered mix crap. :thumbdown:

i cut the avocados down the middle, then seperate both halves.  the easiest way to take the seed out is to smack a knife into it, then turn.  the seed pops right out.  nthe i scoop the rest out with a spoon.

if you don't take the seed out like that, i can see how it would turn into a big slippery mess...

I find using the 'powdered mix crap' makes it taste much better but hey.. to each their own. Good mix though.

I don't use that powdered stuff either but the rest of the recipe sounds nice!

The easiest way to get the seed and the fruit out is to cut in half lengthwise, scoop out the half without the seed with a spoon, just dig the seed out of the other half with the spoon- it should come out pretty clean, otherwise the 'cado probably isn't ripe enough, and if there is a little left on the seed, just gnaw it off-  :grin:
and scoop the rest out with a spoon!

It drives me nuts when I see people meticulously peeling an avocado when they can scoop it out so easily.  :thumbup:

Shit I just reread your post and see we are basically giving the same avocado seeding advice, only yours is a little more....masculine. or something. :lol:

Used to work at a mexican restaurant and I made about 5-7 huge silver food service bowls of gaucamole every morning. I used two full cases of avacados a day.

the best way to cut an avacado:
hold the avacado in the palm of your left hand, the smaller half by your thumb. Holding the knife in your right hand (duh lol) gently dig in to the top then pop off the 'bellybutton' type thing where the fruit was connected with the vine.

next just dig in the knife until it hits the seed and basically turn the avacado with your thumb around the knife, always keep the knife pressed against the seed

OK now that you've cut all the way through, it's like an oreo, so just gently twist the two havles and they should easily come apart.

the side in your palm should still have the seed, lay down the unseeded side the take your knife and kinda 'axe' it diagonally across the face of the seed. Don't be he-man and try to chop the seed, but do it forcefully enought to lodge the blade into the seed. Next gently twist then pull out the knife, the seed should just pop out with it. next just use your thumb on the same hand you're using the knife to pop the seed off.

then just scoop out the green from the avacado skins into a bowl

here's my gaucomole recipe, fucking awesome:

ingredients:
avacados (at least 1 per person eating the dip)
mayonaise
sour cream
lemons
finely chopped onions
garlic *SALT* (do not use garlic powder)
tablesalt
fresh ground pepper

scoop out avacados into large bowl, add lemon juice. The best way to figure out how much lemon juice is roughly half a lemon to every 2-3 avacados. When you use a lemon strictly for it's juice the best thing to do is to roll the lemon on the countertop, applying some pressure with the palm of your hand. this breaks up the insides and frees up a lot more juice. Also squeeze the lemon through your (clean) hand so the seeds get caught and the juice goes between your fingers... also if you had just chopped the onions for the dip before starting everything then this will help get that smell off your hands. once you got your lemons over the avacados, gently sprinkle in some garlic salt. The best method I found was to make it look like a nice 'frost' over the avacados. dummp in the onions. Next take a knife and coarsly chop the avacados by making long strokes through the bowl... just hold the bowl at a lighty slant and rotate it a bit between each slice. this chops up the avacados AND gets the onions a little more diced... next add mayo and sour cream. I would say one tablespoon each per every 2 avacados. Lastly just mash with a potato masher, sprinkle with salt and fresh ground pepper, let set for 15-30 minutes at least (so the avacados can soak in all the flavors)

cilantro
green chilies
cubeb pepper
a pinch of kelp powder
ascorbyl palmitate (fat soluble vit C; helps the lemon or lime juice slow down the browning of the guacamole)

etc...
