water in pressure cooker?

I have a 4.2q pressure cooker that cooks at 10 psi.

I had 2 quick questions, i looked around but i couldnt find anything in the guide im using. Do you put water in the pressure cooker when you sterilize the jars?

and 1 more q. It said to cook the jars at 15 psi for 60 min. If my cooker is 10 psi, that equates to 90 min right?

Just wanted to make sure, thanks for any help

Well i think you have to put water into the pressure cooker or it wouldnt work / sterilse anything

and yeah about 90 i think is right

Put about an inch of water in the bottom of the PC. NEVER PC WITHOUT WATER! Don't let your PC run dry ever either (letting steam excape to much or falling asleep with your PC on for 12 hours). It just need enough water to not let it run dry though. You can get away with less sometimes but I like about an inch, and I'd say you should to just because your new to pressure cooking usage and to much is better then to little (unless you fill it up so water can get into jars).

90 might be ok but I'd do it for 2 hours just in case if I were you. Actually if I were you I'd check out ebay for a nice cheap used one thats big and goes up to 15 PSI (I got a nice 22 quart one for like 30-35 bucks shipped).

I think you might be in trouble with the PSI. If my understanding is correct, the internal temps need to get high enough so that everything bad is killed. The temp required for this is higher than the boiling point of water, hence the need for a pressure cooker. Inside the pressure cooker, the higher the PSI, the higher the boiling point of water becomes. At 15 PSI this is enough to get the boiling point past the kill temp, but this might not be the case for 10 PSI.

Doesn't matter if you PC for 60 minutes or 10 hours if you can't get the temps up high enough.

I would welcome corrections.

I think you may be correct electric. I've seen multiple posts on this subject and some suggest what you say is true but most say longer time will work fine. If it were me I wouldnt take the chance and get a new one like I said but if I were to keep it I'd make sure I'd do it for two hours. You don't get hot enough to flash boil water at 10 PSI though so it might not work...well good luck to you anyway..maybe you'll get some more responses. Probably some saying yay, some saying nay.

I posted about this a day or two ago. Mine only goes to 10 PSI and I was told just to cook it for half an hour longer and I'd be set. A few people said they use 10 PSI cookers with longer cook times with no contam problems. I have yet to test this out, though...

A rank newbie tiptoes into the conversation.

The difference between 10 and 15 pounds is only 10 degrees.
Open pot at sea level. 212 degrees F.
Pressure cooker, 5 pounds. 228 F.
Pressure cooker, 10 pounds. 240 F.
Pressure cooker, 15 pounds. 250 F.

The whole volume of the jar has to come up to temperature, so more time is better.

I second that. Thanks for putting some numbers to it for an easy comparison. Those of us with that 5 psi deficiency should be AOK :smile:

Being that people can steam steralize PF in an hour i bet you can get away with 60min @10psi. If you ever use grains give em the full 90-120 min.

Afoaf has done many many many jars for 90 min at 10 psi. No problem.

if you're doing BRF, then you should be fine at an hour, maybe even at 45 minutes. Remember, we can boil BRF jars at 0 psi.

If you're doing grains though, i wouldn't even attempt it with 10 psi.
