Does it matter how coarse the verm i s in the casing mix?
and...
How long should i wait for the jars to cool down after being sterilized?

The vermiculite is good coarse for casing (fine vermiculite can cause problems)
and...
Wait for them to be cool to the touch (12-24 hours is good)

I use horticultural grade (I believe also says fine grade) for casing mixes with 0 problems.
12-24 sounds good to me too. Don't try to force cool anything either..let your PC and jars cool slowly by themselves. Treat your mushrooms right, grow them with love and patience and they will treat you right in the end.

My PC is completely cool after 6 hours...no need to wait 12-24 unless you are going to bed

PC might be but is your jars? Especially in the center? May or may not be after 6 depending on what sort of jars your doing. Your PC should be cool in like 30 minutes enough for you to open and take out the hot jars and shake them but I've found it takes a while before theyre cool. Maybe 1/2 pints cool quicker then quarts cause of more surface area, I'm only talking quarts. It is best to go to bed though after PCing and just let it all cool overnight. Or maybe I havnt waited 6 hours before checking out my jars because I never finish pressure cooking more then 6 hours before bedtime and I'd still need time before bed to innoculate.
Still, better safe then sorry.
