How long until contamination shows up?

I have done 20 jars of PF tek BRF, and i am fairly sure at least some of them (most of them?) are contaminated, due to my steaming being interupted at the 30 minute mark. As flour is cheap, and spores are not, i was planning to wait to see which jars developed contamination and which didn't. Is this a stupid idea, and if not, how long would i have to wait for any contaminents to show up? thanks=)

It depends. Will the jars be incubated at all? Room temp jars can take a couple days to a week to show contamination. Incubated jars usually always show problems within a couple of days. I don't think it's a stupid idea at all. Just be aware and check on them regularly. Any odd colors, smells, dispose of quickly and carefully. You may be surprised.

And don't be too disappointed if they all fail. . .'steaming' jars has never been a proven method for consistent success. It might work, but pressure is really what you need.

No, i am not incubating them. I probably should be as room temp is coolish here. I will get a pressure cooker when if the first batch works=) No odd smells or obvious contams yet, at the 2 day mark.

It has been a week. I found a tiny (half a dime) sized patch of contamination in one of the jars... I think i will just shoot up the remainder of the jars now, and hope that less then half of the other jars have no contaminations. Also: I forgot to sterilize 2 of the jars, and they do not have contamination either. Did i do something wrong, or am i just lucky? Damn. It appears it is not organic brown rice flour (http://www.bobsredmill.com/catalog/index.php?action=showdetails&product_ID=86). Is it even worth shooting the spores in at this point, or should i just start again?

Sounds lucky to me.A PC helps a lot but I've done a few boils didn't lose to many.

There are some contaminants invisible to the naked eye. This is just to tell you some of those jars might start smelling wrong in a few days. I'm not saying you shouldn't try, i'm just saying things can go wrong in no time. You can achieve a good success rate when steaming if you use fractional sterilization. It's on the faq btw

Dam... More then half of my jars seem to have developed 2 small white dots of contaminant, by the looks of it, some sort of fungi. This is 5 days after a week after i sterilized them. Ah well, i geuss my attempt to create sterile brown rice flour jars was a failure...
