Quicker cool time for PCing

This is not really anything too important but it may help some people.

Usually once you get done PCing it takes several hours for it to cool down, well to speed up the process just get a fan and aim it at the PC. It will cool completly down within minutes. Im not sure if doing it is a good idea, though it worked fine on my jars.

Cooling to fast can cause the jars to crack, but a fan shouldn't speed it up to much to cause that. It is possible that over time it could cause issues though to the jars, PC and O-ring, but it will probably take so long that you will never notice. You are doing this with the PC still sealed, right?

Yup, still sealed. It doesnt cool too rapidly, maybe done in an hour.

If it doesnt hurt the jars or PC it definatly beats sitting around for half a day to innoculate.

Also remember that they need to be cool all the way through. They can feel cool to the touch but the center could still be warm. I would take one jar, open it up and stick your finger or a thermometer deep in it to make sure it is all cool. Better to have to re-PC one jar then kill the spores in 7.

Also are you taking the little cap off right after PCing or letting the pressure drop naturally? If you are leaving it on and fanning at the same time how fast does the pressure drop?

Ya I let it drop naturally I dont release the pressure I just let it do its own thing. And I just put a fan in front of it for a while. It cools very quick and the jars are good too, did what you said and the jar was cool on the inside.

Should be good to go then and a good time saver or money saver so people don't have to buy large canners. Are you doing quart sized jars?
