How do you monitor casing in incubator?

How do you monitor your casing when it is in the incubation stage. I've read that it's bad to expose it to light before it's time to initiate pinning. Do you just wait a set amount of time or take a quick peek at one of them and if it's good then just fruit the rest? :confused:

After casing my casings I put them back into the incubator as Domey suggested for 3-4 days without peeking then they come out where if any myc is poking through I'll lightly patch give it a few fine light mistings over the course of the day to bring the casings moisture back up to optimum ("near saturation") and it goes directly into the fruiting chamber and pin initiation begins immediately (temp drop (10 degrees), light introduction (12-16hrs.) and fresh air exchanges (4-6 a day).
