Decorative "Glass Shards" for deserts.

Ingredients:

1 1/2 C. Sugar
Food coloring of different colors
Liquid flavoring like mint or orange, optional
Baking sheets on baking pan
Sauce pan
spoon

Heat up sauce pan to medium heat, add sugar. Allow to melt and get a light caramel color. Add 1 color at this point for just 1 color.. for multicolors, wait. Add flavoring at this point also. Make sure carmelized sugar is thin enough to be poured. Pour over the baking sheet, even out with spoon. If you want to add a technicolor swirl look at this point, add different color drops in misc. places on your sugar and swirl with spoon. Let cool in refridge or freezer. It'll be ready in an hour. Break up the sugar with a knife.. or simply lift up baking sheet and break it up. They're good for a long time, keep in a bag. Now you've got a VERY simple way to look like a pro for your girlfriend....

hehe i saw this being done on the iron chef just this past weekend :P it was the battle of the dessert chefs :grin:

Isn't sugar pretty tricky to work with? Some chefs need thermometers so they know what temp it is at. It has a bunch of stages like soft ball, firm ball, hard ball, soft crack, hard crack. It seemsl like something really cool to do if you get the hang of it.

Dont worry about temps, just look at the color. As soon as it's carmelized, start adding your other stuff because it's close to being done. Being a chef is 90% experimental buddy, the other 10% is bakery goods. LOL!

a real simple way to test each of those stages is to pour about a teaspoon of the mixture into a cup or bowl of COLD ice water. just test a teaspoon worth of the mixture every few minutes..
