Too hot?

Hi,

I started my first batch of jars about a week ago, and they started colonizing just fine. Everything seemed okay until today. I've been using a space heater to bring the temp up to about 85*F, but today was colder than usual so when I noticed it was at about 69*F I turned the heater to medium and left the room to do some chores. Well in my idiocy I forgot about the damn thing and when I discovered the heater was still on I noticed the thermometer read 113*F!! My question is: Am I screwed? I vaugely remember reading somewhere that the maximum temp mycelium and spores can handle is about 107*F. I think that the jars were exposed to the 113* temp for only 5-10 mins, and I cooled them quickly by the window.

Oh yeah, and to add insult to injury, I had my last syringe in the same room as my jars.

Please tell me some good news,

oh yeah, that's too hot for mycelium to survive. Thermal death is at 106 degrees i believe.

best thing you can do is wait and see if you have more growth in a week or so. the mycelium might just be damaged and need a bit to recoup.

wait and see if there's more growth... if so, you'll be ok. in the mean time, you might want to start another batch of jars just in case.

The air temperature may have been 113?F, but I doubt the inside of the jars were, if it was only at that level for 5-10 minutes.

I bet you'll be fine.

depending on how much they have colonized will also alter the temp inside. If they are over something like 75% then the temp inside the jars will be 1/3 degrees warmer then the actual incubator temp.

So it doesnt sound good for you. If I were you i'd start up a new batch but still leave the other cooked jars incase you get lucky.

oh sorry i miss read a bit, if it was there for like 5/10 mins it shouldnt have done tthhhhaaat much damage you would probably be able to get away with it.

Well, I checked them today and most if not all are fine. All of them showed signs of growth except for one, which I think was stalled anyway. I'm worried about my other syringe though, perhaps I should just make a batch with it and pray?
