Do I still have to put Alum Foil over the jars if I am using canning jars with lids?

Foil is a added layer of protection and will keep light out of most of the jar and maybe more importantly trap moisture in the jar not letting it dry out. Not that I've ever had one dry out durring incubation.

yes, because you're going to make innoculation holes in those lids. The tin foil keeps the water out of those holes. No holes in lids = exploding jars...

if you use tyvek, the foil is not a must, correct?

right. the tyvek may be waterproof, but that doesn't apply to steam... water vapor is smaller than the tyvek will hold out.

Zero's right but its not a must.

I often don't use foil and the jars still work ok. I probably load them a bit wet so what the lose is good? Well you should use foil but I'm lazy and do way to many jars to deal with foil. Unless I make a particularly dry batch..I have covered with foil then a couple of times.
