Cakes have dark patches... please help?

I am growing Equadorians with PF tek. I have three cakes which were birthed 7 days ago, no casing. The pinheads are juuuust beginning to form, very very slowly - seems almost like no progress. Then, today, I noticed that two of the cakes developed each a small darkened area... what is going on?
Is my humidity wrong? I think it might have been too high, so I lowered it.
I know it's not too low because there is not mycelial growth at all on the cakes.
How do I check humidity? I had a crappy humidity gauge that never went up past 77-78% no matter what I did (I tested it in the shower :) Any tips for working humidity gauges? How do you guys test your humidity?

It's just lightly dark so far, not black... the spot (on two cakes) is about the size of a penny, slightly smaller. Of course, that was of today's morning, I donno what's happening now...

it sounds like its just simple bruising.. did you handle that area of the cakes with your hand or anything? because cakes covered in my mycelium can bruise just like a mushroom.
