This stuff is tough. I have a brick of it and am having a hard time breaking it up. Any tips ? Can I just soak the whole thing and store the excess in a ziplock or something ?

Get a knife (larger butcher type) and pound it in with your fist from the side. It's layered so if you break it up in layers like that (once you get the tip in spin the knife and it'll crack easy as you go) easily then the thinner layers break. Break it up into like 1/2 inch layers.
