alternate recipe - pretty much the same as Geordi's, but lets do get back on topic and go cry in self help or something
Stromboli
1/4 cup mustard 2 tablespoons chopped fresh basil or 2 teaspoons dried basil leaves 1 tablespoon chopped green olives 1 pound frozen bread dough, thawed at room temperature 1/4 pound sliced salami 1/4 pound sliced provolone cheese 1/4 pound sliced ham 1/8 pound thinly sliced pepperoni, 2-inch diameter 1 egg, beaten 1 teaspoon poppy or sesame seeds
Grease baking sheet. In a small bowl, stir mustard, basil, and olives; set aside. Roll dough on floured surface to a 16-by-10-inch rectangle. Arrange salami on dough, overlapping slices, leaving 1-inch border around edges.
Spread half of mustard mixture thinly over salami. Arrange provolone and ham over salami. Spread with remaining mustard mixture. Top with pepperoni. Fold one-third of dough toward center from long edge of rectangle. Fold second side toward center enclosing filling. Pinch long side to seal. Pinch ends together and tuck under dough. Place on prepared baking sheet. Cover, let rise in warm place 15 minutes.
Preheat oven to 375 degrees. On the top of dough, cut shallow crosswise slits 3 inches apart. Brush stromboli lightly with beaten egg; sprinkle with poppy seeds. Bake 25 minutes or until browned. Remove to rack; cool slightly. Serve warm. Yield: 12 servings

STROMBOLI SANDWICHES
Ingredients : 2 lbs. french bread 2 lbs. lean ground beef 1 c. ketchup 1 c. tomato sauce 1/2 tsp. garlic powder 1/4 tsp. oregano 4 tbsp. Parmesan cheese 1/2 tsp. fennel seed 1 med. onion chopped Large pkg. Mozzarella cheese slices
Preparation : Brown beef and drain well; add other ingredients except for bread and cheese. Simmer 20 minutes. Stirring often. Cut bread into 4 to 6 inch pieces and then in half lengthwise. Hollow out bottom half. Make a spread of butter, garlic and paprika and spread on top half of bread. Put meat mixture on bottom half, cover with cheese and put top half on. Wrap in foil and freeze. Or, place on cookie sheet and bake at 350 degrees, 15 to 20 minutes. Freezes beautifully so make ahead or more than needed. ---------------------------------- STROMBOLI
Ingredients : 1 lb. ground chuck 1/2 c. tomato sauce 1/2 tsp. garlic powder 1/8 tsp. oregano 1 tbsp. diced onion 2 tbsp. Parmesan cheese 1/4 tsp. fennel seed Kaiser buns
Preparation : Brown beef and drain. Add remaining ingredients. Cook 20 minutes. Using Kaiser buns, spread garlic butter onto 1 side of bun. Put meat mixture on bottom half. Cover with mozzarella cheese slices. Wrap sandwiches in foil and place in the oven for 15 to 20 minutes at 300 degrees. (Makes 6 to 8 sandwiches.) ---------------------------------- STROMBOLI SANDWICHES
Ingredients : 1 lb. ground beef 1 tbsp. finely chopped onion 1/2 c. tomato sauce 1/2 c. catsup 2 tbsp. Parmesan cheese 1/2 tsp. garlic powder 1/4 tsp. fennel seed 1/8 tsp. oregano Mozzarella cheese
Preparation : Fry and drain hamburger with onion. Add rest of ingredients except Mozzarella cheese. Put in buns; top with slice of Mozzarella cheese. Wrap individually or all in a pan. Bake at 350 degrees for 15 to 20 minutes. Makes 8 servings. ---------------------------------- STROMBOLI (ITALIAN SLOPPY JOES)
Ingredients : 1 lb. ground beef 1 tbsp. chopped onion 1/2 c. tomato sauce 1/2 c. catsup 2 tbsp. grated Parmesan cheese 1/2 tsp. garlic powder 1/4 tsp. fennel seed 1/2 tsp. oregano 6 Kaiser rolls Garlic butter 6 slices Mozzarella cheese
Preparation : Brown ground beef and onion, stirring to break up beef. Add tomato sauce and ingredients through oregano. Simmer 20 minutes. Meanwhile, split rolls, spread top 1/2 with garlic butter. Divide meat mix up evenly on bottom halves. Top with slice of Mozzarella. Replace tops, wrap in foil. Bake at 350 degrees for 15 minutes. Serve immediately. Better double this recipe. These go quickly. 6 sandwiches. ---------------------------------- STROMBOLI
Ingredients : 1 frozen dough loaf 1 sm. can tomato paste (6 oz.l) 1/2 lb. browned ground beef 4 oz. Mozzarella cheese 1/2 well beaten egg 3 tbsp. Parmesan chese 1/2 tsp. fennel seed 1 tsp. garlic salt 2 tsp. oregano
Preparation : Allow dough to thaw in cloth-covered bowl, approximately 8 hours. Preheat oven to 350 degrees F. Roll dough on floured surface into a 9x12 inch rectangle. Spread tomato paste over entire dough. Sprinkle with fennel, garlic and oregano. Top with crumbled meat and Mozzarella cheese. Roll the dough from the 12 inch side to the other 12 inch side. Place on greased cookie sheet. Seal edges of loaf. Cover completely with beaten egg and sprinkle with Parmesan cheese. Bake 40 minutes. Variations: Use sausage, pork, pepperoni or ground turkey in place of the beef; for a party loaf, make 2 loaves and place together to form a circle; add your own seasoning secrets.

I was researching the history of the stromboli and those recipes are what came up. You see I am adding options without degrading the original post - neato how that works huh, palsy. As far as I can tell, there really is no record of what the exact stromboli recipe is. It is argued that the original stromboli was really a "stromboli sandwich" made somewhere in Philly. It contained mozz cheese and pepperoni. The recipes posted above are possible variations of that. I personally have never had a stomboli made with pizza sauce. I prefer mustard and mayo, sparky.

yeah I don't know what a REAL stromboli consists of because I've had different variations of stromboli....I never had any with Pizza sauce inside...Ive had some that come with pizza sauce as as sauce to dip it into though...

I saw this on tv, and made it. Very good 
Basic Pizza Dough, recipe follows 1/2 pound hot Italian sausage, removed from casings and crumbled 1 cup sliced yellow onions 1/2 cup thinly sliced red bell peppers 1/2 cup thinly sliced green bell peppers 2 tablespoons thinly sliced seeded and stemmed jalapenos 2 tablespoons minced garlic 1 teaspoon Italian seasoning 1/2 pound sliced ham 1/4 pound thinly sliced pepperoni or salami 1/2 cup sliced black olives 2 cups grated provolone 2 cups grated mozzarella 1 large egg, beaten with 1 tablespoon water to make an egg wash 1 cup finely grated Parmesan
Preheat the oven to 375 degrees F. Grease a large baking sheet and set aside.
In a large skillet, cook the sausage over medium-high heat until browned and the fat is rendered, about 5 minutes. Remove with a slotted spoon and drain well on paper towels. Discard all but 1 tablespoon of fat from the pan. Add the onions, bell peppers, and jalapenos and cook, stirring, until very soft, 4 to 5 minutes. Add the garlic and Italian seasoning and cook, stirring, for 1 minute. Remove from the heat and cool.
Punch down the dough and divide half. On a lightly floured surface, roll out half of the dough to a large rectangle, about 10 by 14 inches. Spread half of the cooled sausage mixture across the dough leaving a 1-inch border. Overlapping slightly, layer half of the ham, pepperoni, olives, provolone and mozzarella cheeses over the top. Using a pastry brush, paint the border of 1 long edge with egg wash. Starting at the opposite long end without egg wash, roll up the dough into a cylinder, pinching the edges to seal. Place on the prepared baking sheet and repeat with the remaining ingredients. Let the dough rise, 20 to 30 minutes.
Brush the top of each stromboli with egg wash. Bake until nearly completely golden brown and starting to crisp, about 20 minutes. Sprinkle each stromboli with Parmesan cheese and return to the oven until the cheese is melted and the dough is golden brown, about 5 minutes.
Remove from the oven and let stand 10 minutes. Slice thickly and serve.
Basic Pizza Dough: 1 cup warm (110 degrees F) water 1 (1/4-ounce) envelope active dry yeast 1 teaspoon sugar 1 tablespoon plus 1 1/2 teaspoons extra-virgin olive oil 3 cups bleached all-purpose flour 1 teaspoon salt
In a large bowl, combine the water, yeast, sugar, and 1 tablespoon oil and stir to combine. Let sit until the mixture is foamy, about 5 minutes.
Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until all the flour is incorporated but the dough is still slightly sticky. Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes.
Oil a large mixing bowl with the remaining 1 1/2 teaspoons olive oil. Place the dough in the bowl and turn to oil all sides. Cover the bowl with plastic wrap and set in a warm, draft-free place until nearly doubled in size, 1 to 1 1/2 hours.
Use as directed.

I made this using the exact recipe above. I used Rhodes brand bread, frenchs yellow mustard and sprinkled in some oregano. I'm not sure if the rhodes bread loaf was smaller than what you use, but it stretched to almost the size of a cookie sheet. The boli was tasty, but we thought it had way too much meat and not enough bread. From what I remember there is supposed to be a bread layer in the middle from folding it over - mine was stuffed to the brim so there was no middle bread layer. I would also use less mustard in the mayo mixture or preferably a nice deli mustard instead. We both gave it a thumbs up and will have it again - with the changes we'd like.

yeah change it however you want. I changed my girlfriends original recipe... Next time try using pizza dough....I think pillsbury makes it in a roll you can buy fresh....
