PC to much?

Is it possible to PC rye jars to much? I have heard everywhere from 45 to 90 minutes at 15 PSI. Also my robot GIR has at times PCed the same jars more than once due to not using them all right away and not wanting to risk contaim he would leave them in there for the next batch. He thought he noticed that it took longer for the ones PCed more than once to complete. Is he reading to much into it or is the continued PCing breaking apart more of the berries by steaming out the water they soaked up either through soak and simmer or simmer in jar? Would it just be better to take those out, hose them down in lysol and toss them in a tub until the next batch is done, or better to PC a second time? They are tyveked and foil and taped. They should be safe without PCing but there are so many facters that can slow down growth he would rather know the facts behind it then trying through months of case studies to know for sure.

Over PCing can throw your moisture content off and slow things a bit. Your PCed jars should stay fine for quite awhile if tossed into a ziplock bag to keep them from drying out. GL

There are people who do rye for 2 1/2 hours (especially if soaked in coffee). Water content is the only problem when PCing for to long but if covered with foil shouldnt be a problem. Store like Hyphae said though and they'll be fine. At least for two weeks as thats the longest I've let jars sit but I'd use them after more time if jars could ever sit around and not be used for that long..
